Patrick is an accomplished Master Chef with 23 years of experience.
He’s faced the heat in kitchens across the globe; from the five-star
Hotels in Amsterdam and Middle East to renowned European
restaurants. Patrick has left his own brand of culinary impressions
as Head Chef in the Hole In The Wall in Dublin; the latter awarded
Black & White Pub Of The Year and honoured in Egon Ronay’s Guide.

He has also worked in the Far East, as Executive Chef in Delaney’s
International, where he brought a taste of the Irish to Hong Kong
and Bangkok, and later as General Manager of Delaney's Kuala
Lumpur. Patrick also owned and operated his own F&B consultancy
business in Dublin, Ireland. Patrick is Chef and part owner of   
Sandias Restaurant at 44 Plaza Damansara, Bukit Damansara K.L.

Patrick’s qualifications range from Master Chef in Kitchen & Larder,
Sauce & Fish to Master Pastry Chef in pastry and bakery. He was
also active as a member of the Panel Chefs of Ireland, Hong Kong
Chefs’ Association and the World Association Societies of Chefs. In
a 1984 competition organised by the Panel Chefs of Ireland, Seanad
Chef Eireann and Fédération Mondiale Des Sociétés de Cusiniers,
Patrick was honoured with the Bronze Medal. He has also been
featured on BBC’s “Lip Service To the World” program.

Patrick’s love and passion for food extends from preparing to
eating it of course! He believes that food, done well, is the
essence of any gathering – be it an intimate and cosy gathering for
friends or an unhurried, four-course, sit-down dinner with the full
